During covid-19, all of us were forced to stay in Hong Kong due to safety measures. While most people rushed to the countryside to grab some fresh air at weekends, there're still a lot of things to do in the city if you do not wish to get crowded with people. This time, I went to a bakery store in Times Square, Causeway Bay to make a cake. Unlike many other bakery classes, people are allowed to make a cake by their own, starting from choosing and measuring of the ingredients, making the cake to decorating, all by ourselves. People could follow their own pace to enjoy the fun of making cakes.

You can choose to walk-in or book a seat online to choose the type of cake you want. Upon arrival, the staff would provide you an iPad for the recipe and people could follow the steps on it.

If you were a first time comer or that you did not have many experiences in bakery, no worry, the store would have you cover. Before making the cake, the staff would first show you around where the materials and tools were placed and explain the use of some of the tools in detail. They would walk around the store to offer assistance and answer your enquiries if needed.

After putting on the apron and getting the relative amount of ingredients needed and tools, let's start making the Yuzu and Mango Charlotte. It's a refreshing cake suitable for summer. The steps were simple and easy to follow. Just follow the steps and take your time, you could always go back to the prior steps if you missed something.

1. Cut the ladyfingers into halves and arranged them around the mould.

2. Mix Yuzu, mousse powder and gelatine powder well with hot water.

3. Put the mixture into a bowl and mix well with the whipping cream. Let it cool in the fridge.

4. Take out the cake from the fridge, put on some fruits and decorations.

Lastly, handed the cake to the staff for packaging and now is ready to bring it home!
The whole process took less than 2 hours to finish. The guidances from iPad were clear, in aid with the texts, photos and videos. People can follow their own pace and repeat the steps if needed. Most people were able to make their own cake successfully, even for a newbie. Most importantly, the store provided all the ingredients and materials needed and we did not have to do clean up, just left the used tools on the recycled counter, which is quite convenient for lazy people like me.
